Italian Chicken Tamale Pie

  • 4 cups (1 quart) chopped fresh tomatoes or 1 (28-oz) can Italian- style plum tomatoes with juice
  • 1 can (16-oz.) can cream style corn
  • 3 to 4 teaspoons salt
  • 1 medium onion, chopped
  • 1/2 cup olive oil
  • 1-1/2 tablespoons chili powder or to taste
  • 1 cup milk
  • 1/2 cup yellow cornmeal
  • 3 eggs, lightly beaten
  • 1 cup pitted black olives
  • 2 cups cooked chicken, coarsely chopped
  • 1 cup each, shredded Monterrey Jack and sharp Cheddar cheese, mixed
  • Olive oil for drizzling
  1. Combine tomatoes, corn, salt, onion, oil and chili powder in large saucepan: cook over medium heat 15 minutes.
  2. Preheat oven to 350 degrees.
  3. Stir together milk, cornmeal and eggs in a mixing bowl: add to tomato mixture and cook, stirring constantly until thick, about 15 minutes.
  4. Remove from heat: stir in olives and chicken.
  5. Pour mixture into lightly greased shallow ovenproof dish.
  6. Top with the cheeses, drizzle with oil and bake until pie is firm and cheese is crusty, 35 to 45 minutes.
