Irresistible Apricot Pie

Ingredients

  • 1 1/2 cup dried apricots
  • 1 1/2 cup water
  • 1 Tblsp. tapioca
  • 1 cup sugar
  • Double crust, butter, sugar
  1. Combine apricots & water in saucepan, cook for 20 minutes. Add tapioca, cook until clear. Add sugar, cook until thick.
  2. Do not chill, pour into unbaked pie shell, dot with butter, cover with top crust & sprinkle with sugar.
  3. Bake in preheated 400º degree oven for 15 minutes, reduce heat to 350º & bake for another 30 minutes.
