Irish Soda Bread
4 cups Hodgson Mill bread flour
1 Tbsp Clabber Girl Baking Powder
1 tsp salt
3/4 tsp baking soda
1/4 cup packed brown sugar
1 cup golden raisins, rinsed in hot water and dried
1 Tbsp caraway seeds
2 cups buttermilk
Sift together flour, Clabber Girl Baking Powder, salt and soda. Mix in raisins until they are thoroughly coated. Stir in caraway seeds; add buttermilk and stir until thoroughly combined. Knead on floured board 10 or 12 strokes; separate into two rounds, gently patting each one. With a sharp knife, score top of each with an X, cut about 1/4″ to 1/2″ deep.
Bake in preheated 350 degree F. oven for 45-55 minutes. Cool on wire racks when done.
