Innkeepers Pie

Ingredients

PASTRY:

  • 1 cup sifted all-purpose flour
  • 1/2 tsp. salt
  • 1/2 cup, plus 1 Tbsp. Crisco
  • 2 Tbsp. water
  1. Mix all ingredients as for pie crust, place in 9-inch pie pan. Flute edges high.

SAUCE:

  • 1-1/2 1-oz square unsweetened chocolate
  • 1/2 cup water
  • 2/3 cups sugar
  • 1/4 cup butter
  • 1-1/2 tsp. vanilla
  1. Melt chocolate with water, add sugar. Bring to a boil, stirring constantly.
  2. Remove from heat, stir in butter and vanilla extract. Set aside.

BATTER:

  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 cup Crisco
  • 1/2 cup milk
  • 1/2 tsp. vanilla extract
  • 1 egg
  • 1/2 cup nuts
  1. Sift together flour, sugar, baking powder and salt; add Crisco, milk, and vanilla extract. Beat 2 minutes at medium speed on mixer. Add egg, beat 2 more minutes, scraping bowl. Pour batter into pie shell. Stir sauce, pour over cake batter. Sprinkle top with chopped nuts.
  2. Bake 350ยบ for one hour. Garnish with whipped cream.
