Iguana Tico Rico Pineapple Relish
- 1 cup diced fresh pineapple
- 1/2 cup unsweetened pineapple juice
- 1/4 cup fresh lime juice
- 2 TBS finely chopped scallion greens
- 1 TBS Iguana Mean Green Hot n’ Tasty Jalapeno Pepper Sauce
Combine all ingredients in a non-metallic bowl and refrigerate for 8 hours to allow flavors to marry. Serve on top of grilled fish.
