Hunancaina Potatoes
Ingredients
This recipe is named for a place called Huancayo in the Andean region of Peru.
2 lbs. boiled potatoes
9 oz. cottager cheese
1/4 cup oil
1 cup milk
1 jalapeno pepper
1 Tablespoon Tumeric
salt, pepper to taste
4 boiled eggs
olives, lettuce for garnishing
Instructions
Wearing a pair of rubber gloves, cut jalapeno pepper, digarding seeds and veins. Place in blender or food processor the cottage cheese, oil, peppers, and seasonings. Blend until mixture is creamy.
On a platter arrange lettuce, cut boiled potatoes and place on top. Pour sauce over, garnish with olives and eggs cut into wedges.
