Hot & Sweet Shrimp Splash
5 slices bacon, cut into bite-size pieces
1 tsp. firmly packed brown sugar
1 Tbsp. Bertolli® Classico™ Olive Oil
2 cloves garlic, finely chopped
1/2 tsp. chili powder
8 uncooked extra large shrimp, peeled and deveined
1 Tbsp. chili sauce
6 cups spring salad mix
1 medium avocado, diced
1 large tomato, diced
1/4 cup chopped red onion
1 Tbsp. pine nuts
40 sprays Wish-Bone® Salad Spritzers® Balsamic Breeze® Vinaigrette Dressing
4 ounces Gorgonzola cheese, crumbled
In large nonstick skillet, cook bacon 8 minutes or until crisp. Stir in brown sugar until melted; remove bacon mixture and set aside.
In same skillet, heat Olive Oil over low heat and cook garlic, stirring occasionally, until golden, about 30 seconds. Stir in chili powder and shrimp and cook, stirring occasionally, 2 minutes or until shrimp turn pink. In small bowl, toss shrimp with chili sauce.
In salad bowl, add salad mix. Top with avocado, tomato, bacon, onion, pine nuts and, if desired, salt and ground black pepper. Spritz with Wish-Bone® Salad Spritzers® Balsamic Breeze® Vinaigrette Dressing. Top with shrimp mixture and cheese.
