Hot Potato Soup

Ingredients

  • 1 pound ground beef
  • 4 cups cubed peeled potatoes (1/2-inch cubes)
  • 1 small onion, chopped
  • 3 cans (8 oz each) tomato sauce
  • 4 cups water
  • 2 teas salt
  • 1-1/2 teas pepper
  • 1/2 to 1 teas Hot Pepper sauce or to taste, if you like in hotter
  1. In a dutch oven or large kettle, brown ground beef; drain
  2. Add potatoes, onions and Hot Pepper sauce, bring to a boil
  3. Reduce heat and simmer for 1 hour or until the potatoes are tender and the soup has thickened
