Honey Grain Bread
Makes 1 loaf
2-1 / 2 cups all-purpose flour
1 / 2 cup whole wheat flour
1 / 2 cup unprocessed bran
1 / 2 cup rolled oats
1 envelope FLEISCHMANN’S RapidRise Yeast
1 teaspoon salt
3 / 4 cup milk
1 / 4 cup water
3 tablespoons honey
2 tablespoons butter or margarine
1 large egg
1 / 2 cup raisins (optional)
Oat Topping (recipe follows)
In large bowl, combine 1 cup all-purpose flour, wheat flour, bran, oats, undissolved yeast, and salt. Heat milk, water, honey, and butter until very warm (120o to 130oF). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in egg, raisins, and remaining flour to make a stiff batter. Place in greased 9 x 5-inch loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes. Sprinkle Oat Topping evenly on top of batter.
Bake at 375oF for 30 to 35 minutes or until done. Remove from pan; cool on wire rack.
Oat Topping: Combine 1 / 2 cup rolled oats and 3 tablespoons milk.
