Honey Glazed Walnut Cake
1 cup shelled walnuts, chopped
1/4 cup all-purpose flour
2 teaspoons Clabber Girl Baking Powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup light brown sugar
5 large eggs
1/2 cup honey
1/2 cup fresh orange juice
1 teaspoon vanilla extract
fresh berries to serve on the side
Preheat oven to 350 degrees F. Butter and flour a 9-inch round cake pan; set aside.
Place the walnuts, flour, Clabber Girl Baking Powder, salt, and cinnamon in a food processor and blend until finely chopped. Add brown sugar and eggs and process until smooth. Pour batter into prepared cake pan and bake at 350 degrees F. for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Place pan on wire rack to cool for 5 minutes. Turn cake out of pan onto rack and cool completely before applying glaze.
For glaze: Combine the honey, orange juice, and vanilla extract in a small saucepan over medium-low heat and bring to a boil. Poke the cooled cake all over with a toothpick and brush liberally with the glaze. Slice the cake and serve. Yields: 4 servings
