Honey Bran Muffins


1 c. unbleached flour
1/4 tsp. salt
1 tsp. baking soda
1 c. raw, unprocessed bran
1 c. buttermilk
1/3 c. raisins
1/3 c. light honey melted with 3
tbsp. butter


Preheat oven to 350 degrees. Best if made in Texas size muffin tins – double recipe. Makes 8 muffins. Fifteen minutes to prepare, 25 to 30 minutes to bake. 1. Sift together flour, salt and baking soda in large bowl. 2. Stir in bran. Make a well in center. 3. Beat together liquid ingredients. Pour this into well in dry mixture. Add raisins and stir everything just long enough to combine. Fill cups 2/3 full. Bake 25 to 30 minutes.
