Home Made Pate

Ingredients

  • 2 Tbsp. chopped shallots
  • 4 Tbsp. butter
  • 1/2 lb chicken livers
  • 3 Tbsp. warm brandy
  • 2 Tbsp. heavy cream
  • 2 Tbsp. chopped parsley
  • S&P to taste
  1. Cook shallots in 1 tab butter until soft. Remove shallots from pan
  2. Add remaining butter & sauté chicken livers over quick fire for 4-5 minutes. Pour warm brandy over livers & ignite
  3. Remove from heat and add shallots, parsley, salt & pepper
  4. Pour mixture into blender or food processor and blend until smooth & creamy
