Hearty Hashbrown Soup

Ingredients

  • 2 lbs. frozen hashbrowns
  • 4 cups water
  • 1 large onion, chopped
  • 3/4 cup sliced celery
  • 4 chicken bouillon cubes
  • 1/2 tsp celery seed
  • 1/4 tsp pepper
  • 4 cans condensed cream of chicken soup
  • 1 quart of milk
  • 2 cups cooked ham, cubed
  • 1 Tbsp dried parsley
  • 1-1/2 tsp garlic salt
  • 8 bacon strips, cooked & crumbled
  1. In soup kettle, combine first 7 ingredients; bring to boil. Reduce heat, cover and simmer for 30 minutes or until vegetables are tender
  2. Mash vegetables with cooking liquid. Add soup and milk; stir until smooth. Add ham, parsley and garlic salt; simmer for 10 minutes or until heated through
  3. Garnish with bacon
