Healthy Chicken Creole

Ingredients

  • 1 cup onion, chopped
  • 1 medium bell pepper, diced
  • 1 clove garlic, chopped
  • 2 tablespoons flour
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 cups lowfat chicken broth
  • 6 ounces tomato paste
  • 1/4 teaspoon hot pepper sauce
  • Black pepper to taste
  • 2 cups boneless, skinless chicken breasts, cooked and cubed
  1. Sauté onion, green pepper and garlic in a nonstick skillet, stirring occasionally. Add flour. Stir until flour starts to brown.
  2. Stir in tomato paste, broth, salt, sugar and pepper sauce.
  3. Cook and stir until mixture comes to a boil and thickens. Stir in chicken and black pepper. Simmer, uncovered 5 minutes or until chicken is heated through.
