Hamburger Roll-Ups

2 1/2 cups Hodgson Mill white flour, sifted
4 teaspoons Rumford Baking Powder
1 teaspoon salt
5 tablespoons shortening
3/4 cup milk (about)

1. Sift dry ingredients together.

2. Cut in shortening.

3. Add enough milk to make a soft dough.

4. Roll in rectangular shape to 1/4 inch thickness and spread with pre-cooked and cooled Hamburger Filling.

5. Roll as for jelly roll and cut in 1 1/2 inch pieces.

6. Place cut side down in greased baking pan and bake in moderately hot oven (400° F) 25 to 30 minutes.

7. Serve with catsup, pickle relish or olive cream sauce. If preferred, make mushroom or tomato sauce by combining a can of condensed soup with 1/2 cup milk.

Serves 6.

Hamburger Filling:

1 medium onion, sliced

1 tablespoon shortening

1 1/2 lb. ground beef chuck

4 tablespoons flour

1 teaspoon salt

1/8 teaspoon pepper

1 cup beef bouillon, stock or milk

Mixing Instructions:

1. Brown onion in shortening, add ground beef, and brown well.

2. Sprinkle flour over meat, blending thoroughly. Add seasonings.

3. Add beef bouillon, stock or milk, stiring constantly until gravy thickens. Cool.
