Guayteaow Pad Si Iew (Stir Fried Noodles)

Ingredients

  • marinaded beef (baove)
  • 8 ounces sen yai (wide rice noodles)
  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar
  • 1 tablespoon oyster sauce
  • 1 cup broccoli florets
  • little thinly sliced carrot (optional)
  • little thinly sliced chinese celery (optional)
  1. Boil the sen yai in water until tender.
  2. Stir fry the beef in a medium hot wok until nearly cooked. Add the remaining ingredients, and continue to stir fry until the sauce is reduced to a consistency you like and the beef is cooked but not overcooked.

MARINADE

  • 2-3 cloves of garlic, crushed
  • 1 medium egg (preferably a duck’s egg) beaten
  • 1 tablespoon cornstarch
  • 1 tablespoon rice wine
  • 1 tablespoon oyster sauce
  • 1 tablespoon palm sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon freshly ground black pepper.
  1. Combine this and then marinade 8 ounces (250 grammes) of beef, sliced very thinly, for about an hour.
