Green Chili Stew

Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 8-10 Anaheim chilies, roasted*, peeled & chopped, or 3 (4-ounce) cans chopped green chilies
  • 4 medium potatoes, peeled & diced
  • 1 28 oz. can diced tomatoes (or tomatoes & green chilies), undrained
  • 2 cups water
  • 1 garlic clove, or to taste
  • 1 teaspoon salt, (optional)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon each, ground: black pepper, coriander, diced onion (optional)
  • Cheddar cheese for garnish
  1. In dutch oven, brown beef & pork; drain. Add chilies, potatoes, tomatoes, water, garlic, salt, oregano, pepper, coriander & onion
  2. Cover, simmer 45 min. or until potatoes are cooked
  3. Garnish with cheddar cheese
