Green Chili Pie

Ingredients

  • 1 (4oz) can chilies, chopped
  • 2 cups warm cooked rice
  • 1-1/2 cup cheddar cheese, grated
  • 2 tbsp pimento, chopped
  • 2 tbsp ripe olives, chopped
  • 6 eggs, beaten
  • 1 tsp salt
  1. Combine chilies, rice, cheese, pimento and olives
  2. Press into two 8″ pie pans to form crust
  3. Season eggs with salt. Pour over rice mixture
  4. Bake 350° 30 minutes or until set
  5. Cut into wedges
