Green Chile Mole With Tabasco Chipotle Pepper Sauce

Ingredients

Ingredients:

  • 3/4 large Poblano pepper
  • 1/2 medium yellow onion
  • 1/2 large green bell pepper
  • 1/2 cup toasted pistachios
  • 1/2 cup toasted pine nuts
  • 1/4 cup packed parsley
  • 1/3 cup packed cilantro
  • 1/2 tbsp. creole spice
  • 1/3 tbsp. chili powder
  • 1/2 tbsp. ground cumin
  • 2/3 qt chicken stock
  • 1/8 cupĀ Tabasco Chipotle Pepper Sauce

Directions:
Roast Poblano pepper, onion and bell pepper in a 400 degrees preheated oven for 10 – 12 minutes. Peel and seed peppers. In a 3 qt. sauce pot combine all ingredients. Bring to a boil and turn down to a simmer until reduced by 2/3. Add 1 2/3 cups of heavy cream. Bring back to a boil, then turn down to a simmer, and reduce by half. Puree and strain through a medium strainer, then season with kosher salt and white pepper to taste.
