Greek Chicken

2 tsp flour
1/4 tsp each salt and pepper
4 boneless skinless chicken breast halves
2 tsp olive oil
2 cubanelle peppers, sliced
1 small onion, sliced
1/2 cup water
1 cup grape tomatoes
2 tsp each minced garlic and lemon zest
1/4 cup crumbled feta cheese
3 tbs chopped dill


Combine flour, salt and pepper, evenly coat chicken. Heat 1 1/2 tsp oil in a (skillet). Add chicken, cook turning once (8 min.) or until cooked through. Remove. Heat remaining oil in skillet. Add peppers and onion, (saute 5 min.) or until crisp tender. Add water, tomatoes, garlic and zest (saute 2 min.) or until tomatoes soften. Remove from heat, sprinkle with feta and dill. Serve over chicken.
