Good Plain Yellow Cake For My Grandmother
This lofty yellow cake is the sort of thing my maternal grandmother, Eliena Ilieff, who I grew up with, would have adored. If bubbie was here, she would have this with a good hot coffee, or Russian samovar brewed tea. Enjoy this in her honor.

1 cup corn oil
½ cup unsalted butter, melted
2 ½ cups sugar
1 tablespoon pure vanilla extract
4 cups all-purpose flour
½ teaspoon salt
4 ½ teaspoons baking powder
½ cup milk
½ cup orange juice
Confectioners’ sugar for dusting
Preheat oven to 350 F. Line a baking sheet with parchment paper. Generously spray a 9 inch angel pan with non stick cooking spray and set aside.
In a food processor or bowl of an electric mixer, blend the oil, butter and sugar well, until smooth. Add in the eggs and vanilla and blend about 2 minutes until smooth. Fold in remaining ingredients, mixing to combine and making sure no unblended fat/sugar mixture remains uncombined.
Pour into cake pan and place on baking sheet.
Bake until cake tests done, it will spring back when lightly pressed with fingertips, about 50-70 minutes.
Cool well and then unmold onto serving platter. Dust with confectioner’s sugar.
