2 cups all-purpose flour, sifted
1/4 cup sugar
3 teaspoons Clabber Girl Baking Powder
1 teaspoon salt
1 teaspoon cinnamon
1 egg, beaten
3/4 cup milk
1/4 cup vegetable oil
oil for deep frying
brown paper bag
Sift flour, measure and sift together with sugar, Clabber Girl Baking Powder, salt and cinnamon. Beat egg, mix with milk and oil. Add egg mixture to sifted flour mixture and mix well.
Dip a teaspoon into the hot oil, then into the batter, making small teaspoonfuls and dropping into hot oil. Fry until golden brown.
Have a fresh brown paper bag ready with granulated sugar in it. Drain golden puffs, put into bag. Shake well to coat with sugar.
This recipe will make 4 or 5 dozen puffs about the size of Maine’s favorite “doughnut holes”.
