Golden Onion Soup

Ingredients

  • 2 C. thinly sliced onions
  • 1/2 C. butter
  • 1/4 C. flour
  • 2 C. chicken broth
  • 2 C. milk
  • 2 C. shredded Mozzarella
  1. In a saucepan over medium-low heat, cook onions in butter until tender, about 10 minutes. Stir in flour until blended. Gradually add broth and milk.
  2. Bring to a boil over medium heat, stirring constantly; cook and stir for 1 minute.
  3. Reduce heat. Add cheese; heat just till cheese is melted (do not boil).
