Ginger Beef & Noodle Soup

Ingredients

  • 1 lb 80% lean ground beef
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/4 to 1/2 tsp pepper
  • 2 cups water
  • 1 can ready to serve vegetable broth
  • 1 (3-oz) pkg beef-flavored instant Ramen noodles, broken up
  • 3 cups frozen broccoli stir-fry vegetable mixture
  1. In non-stick Dutch oven, brown ground beef over medium heat 6 minutes or until outside surface is no longer pink, breaking into 3/4 inch crumbles
  2. Pour off drippings, season with salt, ginger and pepper
  3. Stir in water, broth, Ramen noodles and seasoning packet from Ramen noodles; bring to boil and continue cooking for 2 to 3 minutes or until noodles are tender
