German Polish Sausage Soup

Ingredients

  • 4-1/2 cup water
  • 4 medium potatoes, peeled & cubed
  • 1/2 tsp salt
  • 1/2 lb smoked sausage links or Polish sauage (I use Kielbasa)
  • 1 16-oz can of sauerkraut
  • 1 medium onion, chopped (1/2 cup)
  • 1 clove garlic, minced
  • 1 Tbsp fresh or 1 tsp dried dill weed
  • 1/4 tsp caraway
  • 1 cup sour cream
  • 1 Tbsp flour
  • Pinch of sugar, more or less, for tartness
  1. In large pot, bring the water, potatoes and salt to boiling. Reduce heat & cook till potatoes are firm but tender. Add sausage, sliced into thin rounds. Add undrained sauerkraut. Add seasonings
  2. Remove one cup of broth from pot
  3. Using wire whisk, combine sour and flour. Gradually add hot broth to mixture. Add gradually to main mixture, stirring as you go
  4. Do not boil again, just heat through till hot
  5. Add salt, pepper & sugar to taste
  6. Serve with dark bread and butter
