Gazpacho (Mexican Soup)

Ingredients

2 C Pueblo Chile Homestyle Salsa

2 C tomato juice

1/2 C bell pepper, chopped

21/2 tsps red wine vinegar

1/2 C celery, chopped

2 tsps parsley, chopped

1/4 C onion, chopped

2 tsps olive oil

1/2 C cucumber, chopped

1 tsp salt

1 C can tomatoes, chopped

1/4 tsp black pepper

1 tsp chives, minced

1/2 tsp Worcestershire

1 clove garlic

 

Combine all ingredients. Cover and chill 3 to 4 hours. Serves 4-6.
