1/4 tsp. dried basil leaves, crushed
1 small tomato, seeded and chopped
1/2 cup chopped cucumber
1/4 cup finely chopped red onion
1/4 cup finely chopped orange or red bell pepper
1 cup shredded mozzarella cheese (about 4 oz.)
1 cup baby spinach leaves, coarsely chopped
Wish-Bone® Salad Spritzers® Italian Vinaigrette Dressing
Whisk eggs with basil in medium bowl. Season, if desired, with salt and ground black pepper; set aside.
Combine tomato, cucumber, onion and orange pepper in another medium bowl; set aside.
Cook egg mixture in 10-inch nonstick skillet sprayed with nonstick cooking spray, covered, over medium-low heat 5 minutes or until set. Top with 3/4 cup cheese. Broil, if desired, to melt cheese. Slide eggs out onto serving platter. Top with spinach, then vegetable mixture. Sprinkle with remaining 1/4 cup cheese. Spritz generously with Wish-Bone® Salad Spritzers® Italian Vinaigrette Dressing. To serve, cut in wedges.
