  • 2/3 cup corn syrup
  • 2/3 cup water
  • 1/2 cup cocoa
  • 1 1/2 cup sugar
  • 2 ounce unsweetened chocolate chopped
  • 6 tsp unsalted butter
  • 1/2 cup heavy cream
  • 2 tsp vanilla
  • pinch of salt



  1. Boil the corn syrup in a small saucepan for a minute or two, until it forms heavy strands as you drop it off a spoon
  2. Remove from heat and stir in the water. Sieve together the cocoa and sugar, then whisk them in. Simmer, stirring, until you are sure the sugar has dissolved completely since undissolved sugar will cause the sauce to crystallize later
  3. Add the chocolate, stirring, until melted; blend in the butter and heavy cream. Bring to a full boil for 15 seconds. Remove from heat, and blend in the salt and vanilla. Serve warm
  4. Refrigerate in a covered jar, and place the jar in a pan of simmering water to reheat.
