Frosty Limeade Meringue Pie

Ingredients

  • Pastry for single crust pie
  • 3 eggs, separated
  • 1 cup sour cream
  • 1 4-oz pkg of regular vanilla pudding mix
  • 1-1/4 cups milk
  • 1/4 cup confectioner’s sugar
  • 1/3 cup frozen limeade concentrate, thawed

Ginger Meringue

  • 3 egg whites
  • 1/4 cup sugar
  • 1/4 tsp cream of tartar
  • 1/4 tsp ground ginger
  1. Preheat oven to 350°
  2. Bake pie crust 12 to 15 minutes; let cool
  3. Beat egg yolks
  4. In saucepan, put egg yolks, sour cream and pudding mix. Stir in milk, sugar and limeade
  5. Cook until thickened. Pour into baked pie shell

Ginger Meringue

  1. Beat egg whites until foamy
  2. Add remaining ingredients and beat until stiff
  3. Spread meringue over limeade mixture and bake 12 minutes or until brown
