Frosted Banana Cake

  • 2-1/2 c. flour
  • 1 tsp. salt
  • 3/4 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1-2/3 c. sugar
  • 2/3 c. shortening
  • 2 eggs
  • 1-1/4 c. mashed ripe bananas (2 or 3 medium)
  • 2/3 c. buttermilk , divided
  • 2/3 c. walnuts


  • 1/3 c. plus 2 tbls. flour
  • dash of salt
  • 1 c. milk
  • 1/2 c. shortening
  • 1/2 c. (1 stick) margarine, softened
  • 1-1/4 c. sugar
  • 1 tsp. vanilla
  1. Preheat oven to 375ยบ. Grease and flour two 9 inch round cake pans.
  2. Combine flour, salt, baking powder and baking soda in a medium bowl; set aside. Beat together sugar and shortening in a large bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in bananas.
  3. Add flour mixture alternately with buttermilk, beating well after each addition. Stir in walnuts. Pour evenly into prepared pans.
  4. Bake 30 to 35 minutes. or until toothpick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Loosen edges; invert layers onto racks to cool completely.
  5. Prepare frosting. Fill and frost cake layers with frosting. Run across top and around side of cake for a ridged effect, if desired. Garnish with banana slices and mint, if desired.

Frosting Instructions

  1. Combine flour and salt in a medium saucepan.
  2. Gradually stir in milk until well blended.
  3. Cook over medium heat until thickened, stirring constantly; cool.
  4. Beat together shortening and margarine in a large bowl until creamy.
  5. Add sugar; beat until light and fluffy.
  6. Blend in vanilla.
  7. Add flour mixture; beat until smooth.
