Fried Stuffed Eggs

Ingredients

  • 6 eggs hard cooked
  • 1 T finely chopped pecans
  • 1 T mayonnaise
  • 1 t salt
  • 1/2 t black pepper
  • 1 t prepared mustard
  • 1/2 t celery seed
  • Cracker crumbs
  • Fat for deep frying
  1. Cut eggs in half lengthwise
  2. Remove yolks…reserve whites
  3. Press yolks through a fine sieve
  4. Mix with pecans, mayonnaise and seasonings
  5. Fill egg whites
  6. Press the two halves together to reshape eggs. Roll in crumbs.
  7. Fry in deep fat heated to 365 F until golden brown, drain on absorbent paper
