Fresh Tomato Soup

Ingredients

  • 1/2 C. chopped onion
  • 1/4 C. butter
  • 1/4 C. flour
  • 2 C. water
  • 6 medium tomatoes, peeled and diced
  • 1 T. fresh minced parsley
  • 1-1/2 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. minced fresh thyme or 1/2 tsp. dried
  • 1 bay leaf
  • 1/4 tsp. pepper
  • thin lemon slices, optional
  1. In a large saucepan cook onion in butter till tender. Stir in flour to form a smooth paste. Gradually add water, stirring constantly till thickened. Add the tomatoes, parsley, salt, sugar, thyme, bay leaf and pepper
  2. Bring to a boil; reduce heat, cover and simmer for 20-30 minutes or till tomatoes are tender
  3. Remove bay leaf
  4. Garnish with lemon slices, if desired
