Fresh Strawberry Bread

INGREDIENTS:

 

  • 2 cup fresh ripe strawberries
  • 1 cup all purpose flour
  • 3/4 cup whole wheat pastry flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup sugar
  • 2/3 cup mashed ripe banana
  • 2 egg whites, lightly beaten until frosthy
  • 1/3 cup water

STEP BY STEP:

 

  1. Crush half the strawberries in a saucepan, and simmer over medium heat 2 minutes, stirring constantly
  2. Slice rest of strawberries and mix with the cooked berries. Chill
  3. Preheat oven to 350�. In a medium bowl combine all dry ingredients except the sugar. In a larger bowl mash the banana
  4. Mix the sugar in. Mix the egg whites and water in. Add flour mixture to wet ingredients. Blend well. Add strawberries and pour into a nonstick bread such as a 8.5×4.5-inch pan
  5. Bake for 40 minutes to 1 hour or until toothpick inserted in center comes out clean. Cool for about 10 minutes and gently pry off the sides and turn out onto racks to cool.
