Fresh Sour Cherry Pie


  • pastry for 2 (9 inch) crusts
  • 1 1/3 C. sugar
  • 1/3 C. flour
  • 4 C. freshly seeded sour cherries
  • 1/4 tsp. almond extract
  • 2 T. melted butter
  1. Mix sugar, flour, almond extract and melted butter along with the cherries.
  2. Pour into pie crust and top with remaining crust flute edges and cut slits in top crust.
  3. Bake for about 40 minutes in a 425ยบ oven. Cover the crinkled edges of pie crust with foil the first 25 minutes to prevent browning too fast. Remove foil and bake until pie is brown and red juice shows through slits on top of pie.
  4. Cool before serving.
