Fresh Cherry Pie (Civil War)

Ingredients

  • two crust pastries
  • 4 C. sour cherries
  • 4 T. flour
  • 2 C. sugar
  • 1/4 tsp. salt
  • 2 T. butter
  1. Line a 9 or 10 inch pie plate with pastry
  2. Pit the cherries and mix with flour, sugar and salt. Fill pie crust with fruit mixture and dot with butter. Cover with top crust and pierce holes in the center
  3. Pinch the crusts firmly together and crimp edges
  4. Bake in a 450ยบ oven for 10 minutes, turn heat back to 350′ and bake for 40 minutes more
  5. Cool a bit and serve warm
