Fresh Blueberry Pie

  • 1 C. blueberries
  • 1 3/4 C. sugar, divided
  • 1 tsp. lemon juice
  • 3 T. cornstarch
  • 1 baked pie shell
  1. Simmer blueberries and 3/4 C. sugar for 3-4 minutes on the stove.
  2. Mix 1 C. sugar and cornstarch. Add to berry mixture and boil until ruby clear, stirring constantly. Add lemon juice when thick.
  3. Cool. Pour fresh blueberries into baked pie shell. Pour syrup mixture over fresh berries.
  4. Let cool. Serve with whipped cream, ice cream, or plain.
