Fresh Blueberry Pie
- 1 C. blueberries
- 1 3/4 C. sugar, divided
- 1 tsp. lemon juice
- 3 T. cornstarch
- 1 baked pie shell
- Simmer blueberries and 3/4 C. sugar for 3-4 minutes on the stove.
- Mix 1 C. sugar and cornstarch. Add to berry mixture and boil until ruby clear, stirring constantly. Add lemon juice when thick.
- Cool. Pour fresh blueberries into baked pie shell. Pour syrup mixture over fresh berries.
- Let cool. Serve with whipped cream, ice cream, or plain.
