Fresh Apricot Pie

Ingredients

  • 1 1/2 cup dried apricots
  • 1 1/2 cup water
  • 1 Tblsp. tapioca
  • 1 cup sugar
  • 1 baked 9″ pie shell
  • 1 8 oz. Cool Whip, softened
  • 1/4 cup toasted coconut
  1. Combine apricots & water in saucepan, cook for 20 minutes. Add tapioca, cook until clear. Add sugar, cook until thick. Remove from heat & chill
  2. Pour into baked pie shell, Spread Cool Whip over filling, sprinkle with toasted coconut
  3. Refrigerate until serving time
