Fresh Apple Bread
2 cups granulated sugar
3/4 cup shortening
1 teaspoon vanilla
3 medium apples, cored and coarsley chopped
3 cups all-purpose flour
1/4 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon Clabber Girl Baking Powder
Preheat oven to 350 degrees F. Lightly grease and flour two 8×4 inch loaf pans; set aside.
In a large bowl cream together shortening and sugar. Add eggs one at a time and mix well. Add vanilla. In a separate bowl combine flour, salt and baking powder. Add the chopped apples to the flour mixture and toss gently. Pour into creamed mixture and stir until combined.
Pour into two prepared (greased and floured) 8×4-inch loaf pans. Bake at 350 degrees F. for one hour or until loaves test done. (A toothpick inserted in center comes out clean.)
