French Mushroom Soup

Ingredients

  • 3 cups water
  • 3 chicken bouillon cubes
  • 1/2 pound fresh mushrooms (slice four, chop the remainder)
  • 1/4 cup finely chopped onion
  • 1 cup evaporated skimmed milk
  • 1/8 teaspoon salt
  • few grains of cayenne pepper
  • 1 tablespoon chopped fresh parsley
  1. In a medium sized saucepan bring water, bouillon cubes, chopped mushrooms, onion, milk, salt and cayenne pepper to a boil. Cover and simmer 30 minutes over low heat. Stir in parsley.
  2. Ladle soup into bowls and sprinkle with raw mushroom slices
