Fluffy Strawberry Pie

Ingredients

  • 2-1/2 cups flaked coconut, toasted
  • 1/3 pkg. cream cheese, softened
  • 1 (14) oz. can Eagle Brand Milk
  • 2-1/2 cups fresh or frozen strawberries, mashed or pureed
  • 1/3 cup margarine
  • 1 cup whipping cream, whipped
  • 3 Tbsp. lemon juice
  1. Combine coconut and margarine Press firmly on bottom and up sides to rim of a 9-in pie plate.
  2. In large mixer bowl, beat cheese until fluffy. Gradually beat in milk. Stir in strawberries and lemon juice. Fold in whipped cream. Pour into pie crust
  3. Freeze 4 hours or until firm, before serving
