Fluffy Apricot Cheese Pie


  • 1 C. chopped dried apricots
  • 2 eggs, separated
  • 1 tsp. lemon juice
  • 1/2 tsp. gated lemon peel
  • 1/2 C. brown sugar
  • 1 tbls. whole wheat flour
  • 1/2 tsp. cinnamon
  • 2 C. ricotta cheese
  • 1 9-inch unbaked pie shell
  1. Rinse the apricots and place in saucepan with just enough water to cover. Bring to a boil; then reduce heat and simmer 5 minutes.
  2. Preheat oven to 350ยบ
  3. In a mixing bowl, stir together the egg yolks, lemon juice, and lemon peel. Combine brown sugar, flour and cinnamon. Add gradually to the egg mixture, beating constantly. Stir in ricotta cheese.
  4. Beat egg whites until stiff peaks form. Gently fold into cheese mixture.
  5. Arrange cooked apricots in the bottom of the uncooked pie shell. Pour the cheese-egg mixture over them, and bake for 40 minutes.
