Favorite Carrot Muffins
1 1/2 cups oil
2 cups sugar
3 cups all-purpose flour
2 teaspoons Clabber Girl Baking Powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 1/4 cups grated carrots
1 cup walnuts, coarsely chopped
1 cup raisins
Mix oil, sugar and eggs in mixer for about 2 minutes at medium speed. In a separate mixing bowl, sift flour, Clabber Girl Baking Powder, baking soda, cinnamon, nutmeg and salt. Gradually add to sugar mixture. Add carrots, walnuts and raisins. Blend dough until no flour is seen
Fill greased muffin cups 2/3 full.
Bake at 350 degrees F for 35 to 40 minutes or until a toothpick inserted in center comes out clean. Serve warm or at room temperature.
Makes 10 to 12 muffins.
