Fancy Chicken Liver Pate

Ingredients

  • 1 lb Chicken livers
  • 6 slices bacon
  • 1/2 C pecans
  • 2 hard-cooked eggs
  • 1/2 onion
  • 1/4 C dry sherry
  • 1/2 C mayonnaise
  • 1/4 t salt
  • 1/4 t pepper
  1. Cook bacon until crisp; drain and crumble. Sauté livers until done to liking.
  2. In food processor, add pecans an pulse 2 or 3 times. Remove and set aside.
  3. Place eggs in processor and pulse until chopped. Remove and set aside.
  4. Place livers, onion and sherry in processor and puree.
  5. Combine this with bacon, pecans, eggs, and remaining ingredients.
  6. Spoon into lightly oiled 3 cup mold
  7. Chill at least 3 hours.
