Fajita Nachos

Ingredients

  • 1 bag white corn tortilla chips
  • 1 flank steak cut in thin strips
  • juice of 1 lime
  • 1 tbls liquid smoke
  • 1/2 shot tequila
  • 2 ripe avocados chopped sm.
  • 1 cup pepper jack cheese
  • 1 onion sliced
  • 1 bell pepper sliced
  • 1 cup cheddar cheese
  • 1/4 cup chopped black olives
  • 1 cup salsa
  • sour cream
  • 1 cup shredded lettuce
  • 3 green onions diced
  • 1 sm. can green chilies drained
  1. In a large skillet pour in lime, tequila and liquid smoke green chilis, heat
  2. Add meat, cook on high until browned
  3. Add onion and bell pepper, reduce heat and cook until onions are translucent and meat is tender. Drain, squeeze on a large oven proof dish
  4. Layer chips, pour meat mixture over top, 1 layer pepper cheese, 1 layer cheddar
  5. Put in 350 oven and melt cheese
  6. Remove from oven (you may need to transfer this to platter, add lettuce, avocados, olives, salsa, green onions, sour cream)
