Eggplant Caviar

Ingredients

  • 1 large eggplant
  • 1/2 C. olive oil
  • 1/2 large onion, minced
  • 1 green pepper, chopped
  • 1 garlic clove, crushed
  • 1/2 tsp. salt
  • pepper to taste
  • 2 T. white wine
  • 1 T. lemon juice
  1. Bake eggplant at 400º for 1 hour. Peel and chop.
  2. Sauté onion, garlic and pepper in oil until soft.
  3. Add remaining ingredients to skillet with vegetables, stir in eggplant and simmer about 15 minutes until mixture is thick. Chill
