Egg Nog Pie


  • 1 pkg vanilla pudding mix (not instant)
  • 2 teas unflavored gelatin
  • 2 cups egg nog
  • 1/2 teas rum extract
  • 1 cup whipping cream
  • 9″ baked pie shell
  1. Combine pudding mix and gelatin in saucepan. Blend in egg nog & cook on low heat, stirring until thickened & bubbly
  2. Remove from heat and stir in rum extract
  3. Chill in fridge, stirring frequently to prevent a skin from forming on top
  4. Whip cream till stiff
  5. Beat egg nog mixture until smooth and fold in whipped cream
  6. Pour into baked shell & chill several hours until set
  7. Garnish with chocolate shavings, glazed fruit, whipped cream or nutmeg
