Easy Coconut Pie

Ingredients

  • 3/4 cup sugar
  • 2 tablespoons of cornstarch
  • 2 cups of milk
  • pinch of salt (how’s that for accuracy!)
  • 3 eggs separated
  • 1 can of coconut
  • 1 tsp of vanilla
  • 1 baked pie shell
  1. Mix sugar and cornstarch. Add milk, salt, and egg yolks. Cook over low heat until thickened. Add coconut and vanilla
  2. Beat egg whites until stiff. Add 1/2 cup of sugar gradually. Sprinkle with coconut
  3. Bake at 300° until brown
