Easy Blender Lemon Pie

Ingredients

  • 1 large lemon
  • 2 c. sugar
  • 4 eggs
  • 1 stick butter, melted
  1. Take 1 whole large lemon, cut into quarters; remove seeds.
  2. Blend lemon, sugar and eggs until fine puree. Pour in melted butter and continue blending at high speed 1 to 2 minutes. Pour into an 9 inch uncooked pie shell.
  3. Bake in 350° F preheated oven for 35 to 45 minutes or until center is set.
  4. Top with whipped cream if desired.
