Easy Blender Lemon Pie
- 1 large lemon
- 2 c. sugar
- 4 eggs
- 1 stick butter, melted
- Take 1 whole large lemon, cut into quarters; remove seeds.
- Blend lemon, sugar and eggs until fine puree. Pour in melted butter and continue blending at high speed 1 to 2 minutes. Pour into an 9 inch uncooked pie shell.
- Bake in 350° F preheated oven for 35 to 45 minutes or until center is set.
- Top with whipped cream if desired.
