Dutch Apple Cheese Pancakes


1/4 c. sweet cream butter
2/3 c. all purpose flour
3/4 c. milk
2 eggs
1/2 tsp. salt

2 tbsp. sweet cream butter
2 tsp. cornstarch
1 tbsp. cold water
1/3 c. firmly packed brown sugar
1/2 tsp. cinnamon
2 med. cooking apples, cored and
sliced in 1/2 inch slices
1 c. Land ‘O Lakes natural shredded cheese


Heat oven to 400 degrees. In 9 inch pie pan melt 1/4 cup butter in oven, 2-4 minutes. In large bowl combine flour, milk, eggs, and salt using wire whisk or rotary beater. Beat until smooth, 2-3 minutes. Pour batter into pie pan and bake 17-23 minutes or until dark golden brown. Meanwhile in 10 inch skillet melt 2 tablespoons butter. In small bowl stir together cornstarch and water. Stir brown sugar, cinnamon and cornstarch mixture into butter and cook over medium heat stirring constantly until sugar dissolves and mixture bubbles and thickens, 1-2 minutes. Stir in apples, continue cooking stirring constantly and apples are evenly coated and crispy tender, 4-7 minutes. Spoon filling into center of hot pancake, sprinkle with cheese. Cut into wedges and serve immediately. Makes 6 servings.
