Dried Mango Hamantaschen Filling
Ingredients
Oh my – hamantachens gone tropical! Costco, among other places, now stocks
bags of delectable dried mango strips. Made into a filling, they make
cutting edge, hamantaschen.
1 1/4 pounds dried mango slices
2 cups dried apricots
zest of one orange, optional but nice
¼ – ½ cup sugar
½ cup orange juice
water if required
Instructions
Place everything in a medium saucepan and over low heat, simmer fruit until
it softens and absorbs liquid, about 5-10 minutes, adding in some water, if
required (fruit needs to cook more). Cool well, and then place in a food
processor and process to make a puree.
Refrigerate until needed.
Makes enough for 4-6 dozen hamantaschen.
